Pioneer Profiles: Meet Jennifer Eastin-Cox

MILES CITY, MONTANA: Jennifer Eastin-Cox describes her workday as “taking care of those I know and love.”

Her passion is clearly showcased in her position as a Dining Services Assistant in the MCC Cafeteria, where she has worked for over two years. In this role, she prepares nutritious meals for the entire college community, including students, faculty, staff, and campus visitors.

“My favorite part of working at MCC is the family vibe and amazing support,” she says. “Everyone takes care of each other and helps out, no matter the situation.”

Jennifer grew up in Colstrip, Montana, and experienced her current line of work at an early age by working as a head waitress in a little restaurant named DK’s.

She describes herself as real, honest, compassionate, sarcastic, and even a little “spicy”. She enjoys cooking and spending time with her family and friends and cheering for the Pioneers at their home games on campus.

Jennifer’s love of cooking is a large part of the MCC Cafeteria’s achievement in being named as one of the top 10 schools (out of 277) in the Skyfactor Benchworks Survey early in her career at MCC. The cafeteria has since been named the top dining program in the nation largely due to the passion and dedication of Jennifer and her colleagues.

Her favorite piece of advice to share comes from Harriet Tubman: “You have within you the strength, the patience, and the passion to reach for the stars to change the world.”

It’s with determination and passion that Jennifer dreams of one date owning a food truck with her husband and traveling the country. “We would love to cook in so many different places and for so many different people.”
